Ají dulce


   


Ají dulce is a sweet pepper variety of Capsicum chinense, often found in Latin America and the Caribbean. This pepper is a key ingredient in the preparation of Venezuelan cuisine, the Hallaca. It has 0 SHU (Scoville Heat Unit)

In Puerto Rico, Ají dulce is grown commercially and is an important ingredient for making sauces. It is used to make sweet jam in Brazil, where the pepper is known as Rubra or Biquinho.

Ají dulce is a small, light green pepper that will turn red or yellow if mature on the plant. It can be used green or ripe, seeded and frozen for use in winter time, a better technique for preserving the rich flavor than drying.
