Hericium erinaceus is an edible mushroon in the tooth fungus group. It is known as Lion's Mane Mushroom, Bearded Tooth Mushroom, Hedgehog Mushroom, Bearded Hedgehog Mushroom, pom pom mushroom, or Bearded Tooth Fungus. In Chinese, it is called hou tou gu, meaning 'monkey head mushroom'. Hericium erinaceus can be identified by its tendency to grow all the spines out from one group, long spines (more than 1 cm long) and its appearance on hardwoods. In the wild, these mushrooms are common sight on dead hardwood during late summer and autumn. The texture of the mushroom is often compared to that of seafood, and is cultivated commercially on logs and sterilized sawdusts. It is sold fresh or in dried forms.
