Hydnum repandum is an edible mushroom commonly known as Sweet Tooth Fungus, Wood hedgehog, Hedgehog Mushroom, and Urchins of the Woods. It has spore-bearing structure which are shaped like teeth rather than gills. The mushroom can be found singly or in groups in coniferous or deciduous woodlands in North America and Europe. This species is closely related to Chanterelle (Cantharellus cibarous).
Hydnum repandum has an irregular cap of light-orange or tan color, about 15 cm wide. The underside is covered with small white spines of 5-6 mm long, reminiscent of those of a hedgehog. The stipe is bare, 2-10 cm long and 0.6-2 cm wide, and same color like the cap. The position of the stipe can be off-center sometimes.
Although Hydnum repandum has a distinctive appearance, it can still be confused with the non-edible species, such as Sarcodon scabrosus. Be careful when picking the mushrooms.
Hydnum repandum is a good and tasty mushroom. It has a sweet, nutty taste and a crunchy texture. Old specimens may taste bitter, so all mushrooms must be cooked well to remove the bitter taste.
