Kaffir lime (Citrus hystrix) is a lime in the family Rutaceae. It is known as kieffer lime, makrud lime, or limau purut and is a native to Malaysia, Indonesia, Laos and Thailand. Kaffir lime is a green lime with rough skin that grows on thorny bush with aromatic and distinctively hourglass-shaped leaves. The rind of the kaffir lime is used in Thai and Lao curry paste, adding an aromatic and astringent flavor. The aromatic leaves are used extensively in Southeast Asian cuisines, and can used fresh or dried, and can be stored frozen. The acidic juice can be made into a refreshing drink with added sugar and ice.
