Mulato pepper is a variety of species Capsicum annuum. It is mild to medium hot chili pepper, measuring 500-5,000 SHU (Scoville Heat Unit). Mulato pepper is closely related to poblano (ancho). It is usually sold dried, and is an important ingredient in making mole and other Mexican sauces and stews.
Mulato is 10 cm long and 5 cm wide, wide at the top and taper to a blunt point, dark green when young, maturing to a red or brown color. Dried mulato is flat and wrinkled, and usually brownish-black in color. The taste of mulato is somewhat like chocolate or licorice, with undertones of cherry and tobacco.
