Scotch bonnet pepper


   


Scotch bonnet (Boabs Bonnet, Scotty Bons or Bonney peppers) is a variety of species Capsicum chinense. It is one of the hottest peppers in the world, with a heat level of 100,000 - 350,000 SHU (Scoville Heat Unit). Scotch bonnet grows mainly in the Caribbean islands and also in Guyana and the Maldives Island. The name Scotch bonnet is named due to its resemblance to a Tam o´shanter hat (a Scottish style of bonnet or cap).

Scotch bonnets are often used in Grenadian, Surinamese, Jamaican, Barbadian, Trinidadian, Haitian and Caymanian cuisines and pepper sauces, and also in other Caribbean recipes. Fresh Scotch bonnets are green, change to colors ranging from pumpkin orange to scarlet red. Ripe peppers are prepared by cutting out the seeds which can be saved for cultivation.
