Hypsizygus tessellatus or shimeji is an edible mushroom native to East Asia. There are two types of shimeji, one is Buna-shimeji (Brown Beech Mushroom, Beech Mushroom, Brown Clamshell Mushroom) and the other is Bunapi-shimeji (White Beech Mushroom, White Clamshell Mushroom) which was selected from Buna-shimeji.

Shimeji should be eaten cooked as raw mushroom has a bitter taste. Cooked shimeji is delicious and has a pleasant, firm, and slightly crunchy texture, and a slight nutty flavor. It is often used in soups, stews and sauces.
