Snow pea (Pisum sativum var. macrocarpon) is a variety of pea plant in the family Fabaceae, producing flat edible podded peas. It is also known as Edible-podded or Sugar pea. The pod is eaten before the string develops and the peas start to swell. Snow peas are generally harvested when the pods are young and flat, and the seeds are small and immature.
Snow peas must be picked regularly, at least every other day, to assure sweet, fiber-free pods. The pods are favored in Asian cuisines, and are usually stir-fried, steamed or mixed with meat or vegetables. Pea pods lose their crispiness if overcooked. Snow peas have high sugar content and will brown or burn quickly if stir-fry over intense heat.
