Tatsoi (Brassica rapa - Narinosa group) is leaf vegetable in the family Brassicaceae. It is also known as Spoon mustard, Rosette bok choy and Spinach mustard. Tatsoi is used in salad, soups and stir-fry.

Tatsoi is vigorous and cold-tolerant (-10°C), and forms a thick rosette close to the ground, with dark green, spoon-shaped leaves and short, light-green stalks. The leaves has a delicious, mild and mustard flavor. In warm weather, the plant is erect, while in cold weather, tatsoi forms flat rosettes.

Tatsoi is a popular salad green that can be harvested at any stage. It is 20-25 days to maurity for baby leaf, and 40-50 days for mature leaves. Planting season is from late spring to early summer or autumn. Harvest the whole plant, or pick the outer leaves for several weeks.

Tatsoi prefers mild and cool temperatures, and fertile, well-drained soil.
